Fergus Henderson OBE (b. 1963) is an English chef, and chief proponent of ‘nose to tail’ eating (using every part of the animal). Henderson co-founded the restaurant St. John in Smithfield, London in 1995, and was awarded a Michelin star in 2009. His first book, Nose to Tail Eating: A Kind of British Cooking was published in 1999.
